Easy Flatbread Pizzas

Well, they really aren't flatbread...or pizza, really.

What I did was top 2 halves of a giant ciabatta bread I bought at Sams (MembersMark Rosemary-Garlic Ciabatta) with cheese and stuff I had in the fridge and pantry. Then slavered the entire mess in good California Olive Oil and baked the bejeezus out of it at 425 degrees until it was melty, crunchy and delicious.

Here is what I used, but feel free to mix it up anyway you like, with whatever you may have lying around.

Easy Flatbread Pizzas

1 ciabatta bread, large cut in half to expose the middle
olive oil
grape tomatoes, diced
8 kalamata olives, pitted and cut in half
marinated artichokes, drained and diced
feta cheese, cubed or crumbled
fresh mozzerella cheese, cubed
parmesan or romano cheese, grated
salt and pepper
2 garlic cloves, minced

Preheat oven to 425.
Lay your bread halves cut side up on a large cookiesheet lined with foil. Drizzle some olive oil over the surface. Now distribute the tomatoes, olives and artichokes evenly. Add a handful of parmesan over this.

Now add your other cheeses. (I made on with all feta and one with all mozz) Drizzle more olive oil, add the salt pepper and oregano, and the garlic.

Bake until it's all bubbly, melted, browned on the edges, and you can't wait another second. (about 20 minutes)You can serve this with a salad on the side. Perhaps a glass of chianti. Serves 4 gluttons or 6-8 regular people.
